Mướp hương mua về bào vỏ cắt khúc vừa ăn và rửa sạch với nước muối pha loãng. Mề lòng gà mua về cắt lọc bỏ bớt mỡ và máu còn dính trên bọ lòng và bóp muối rửa sạch với nước.
Cho 500ml nước vào nồi đun sôi. Cho bộ mề lòng gà trần sơ 5 phút (mình cho da heo vào trần sơ tùy theo khẩu vị mỗi người nha) sau đó vớt ra để ráo.
Cho dầu vào chảo nóng cho tiếp tỏi băm vào phi thơm sau đó cho mề lòng gà đã trần sơ vào đảo đều 2 phút. Tiếp kế cho mướp vào xào đều tay và nêm 1 muõng cafe hạt nêm và 1/3 muỗng cafe bột ngọt vào đảo đều tay 2 phút. Cho 1 vá canh nước lọc vào chảo để cho mướp mau mềm và chín và cũng làm cho có chút ít sốt để không bị khô mề gà và mướp. Sau đó tắt bếp và cho hành ngò cắt khúc vào và 1/2 muỗng cafe tiêu vào cho thơm.
